Fresh Peach Salsa with Cornmeal Chicken
I know this sounds like an odd recipe. I thought the same thing but we were pleasantly surprised!
Fresh Peach Salsa - See recipe below:
1/2 Cup yellow cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless, skinless chicken breasts
2 tablespoons vegetable oil
Mix cornmeal, salt, pepper. Coat chicken with cornmeal mixture. Heat oil in 10-inch skillet and cook chicken in oil 15 to 20 minutes, turning once, until juice is no longer pink when thickest pieces are cut. Serve with salsa.
Fresh Peach Salsa
3 cups chopped, peeled peaches.
1 large tomato, chopped
1/4 cup cilantro
2 Tablespoons vegetable oil
1 Tablespoons white vinegar
Salt
Toss lightly together
Enjoy!!
