Erickson Ranch Fig Jam over Pie Crusted Brie
served with Erickson Ranch Apples
Ingredients:
- Wedge of Brie Cheese
- Erickson Ranch Fig Jam varieties: Mission (black Fig) or Genoa (White Fig with a bit of Ginger)
- Pie crust (home- made or pre- prepared)
- Pre-heat oven to 425 degrees
Directions:
- Bring cheese and crust to room temperature.
- Place cheese in a baking dish. Whatever dish you use will be your serving platter as the cheese will not be easily removed once baked.
- Pour the Fig jam over the cheese in the amount you like. We use about half a jar.
- Gently place the pie crust over the Fig covered brie and tuck in the sides to contain the jam and cheese as it bakes. Cut away the extra crust.
- Bake for approximately 20 minutes. Keep an eye on the oven. Please do not go out and feed the dog, answer your e-mails or get wood for the fire. 20 minutes comes and goes in a flash.
- Turn the oven to broil and brown the curst.
Serve with slices of your favorite Erickson Ranch home grown apples, sliced thinly, or your favorite cracker.
When served we have learned to place it on a low heating source as this allows the cheese to stay soft , smell delightful and easily spread on the apples.
