Zucchini Frtttata
Ingredients:
- 6 large eggs
- Salt and ground pepper to taste
- 1/3 cup freshly grated Parmesan cheese
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 3 ztcchini, finely sliced
- 2 tablespoons chopped basil or parsley to taste
- 2 garlic cloves
Preheat oven to 350.
Beat eggs with salt and pepper in a medium bowl. Beat
in Parmesan cheese. Melt 3 tablespoons butter with oil
in a heavy 8- 10 inch skillet. When butter forms, add onion.
Saute over medium-low heat about I minute. Add
zucchrni, basil and garhc. Saute 3 to 4 minutes or until
lightly browned. Pour egg mixture over ntcchini mixture
bake for 30 minutes or until the frittata sets up.
Remove from oven and cut into wedges. Serve hot or at
room temperature.
